Spinach, Feta and Mushroom Quiche

Okay friends, here is an amazing recipe that you can make your own. This is perfect for a simple lunch, either entertaining or simply for the family to gather around the table and enjoy. To spice it up and put smiles on the faces of those in your house refer to it as ‘Qwesh’ rather than ‘Quiche’. Let them think you have learned the ‘proper’ way to pronounce it…… it ALWAYS brings a giggle.

Here you go:

Spinach, Feta and Mushroom Quiche

4 eggs

1/4 tsp pepper

1/4 tsp baking powder

1/2 cup milk

2 cups raw spinach

1/2 a white onion or 5 green onions

1/2 cup chopped mushrooms (you can used canned if you want)

125 grams of Feta Cheese

1 frozen pie crust (I cheat sometimes and buy a frozen pie crust. Make sure you poke holes in the bottom before adding mixture as you don’t want the crust to bubble.)

Method:

Preheat Oven: 475. Cooking Time: 20 mins. Pan Size: 9 inch pie plate. Serves: 4-6

Saute onions and mushrooms in a splash of butter or olive oil. Once soft, add the Spinach and saute until whilted down. In a separate bowl mix eggs, pepper, baking powder and milk

Mix eggs, pepper, baking powder and milk together. Add onions, mushrooms and spinach to egg mixture. Once mixed, pour into prepared pastry shell. Dot chopped Feta around the top of the pie.

Bake in preheated oven (475) for 20 minutes. Quiche is done when a knife is inserted into the middle and it comes out clean.

Serve with a simple spinach salad. I like spinach, red onion (thinly sliced) and cranberries drizzled with balsamic vinaigrette. Yumm-o!!!!
