Okay friends, being thefamilyroom girl and one who is absolutely passionate about getting families around the dining table this recipe is top shelf! Jamie Oliver nails it and this is definitely one the kids will gobble up, it’s simple, budget friendly and full of flavour. I watched the video the other day and decided to have a go and make it my own.
I did a few things differently. I used a combination of Sesame Oil and Vegetable Oil simply because I LOVE the flavour the sesame oil adds. Also, I forgot about the water chestnuts {only because I was making it from memory and didn’t review before I made it….whoops}, I also left out the Shitake Mushrooms and the corriander only because I didn’t have them on hand. Funny, you would think I didn’t have anything in my version. On the contrary, I had red capsicum, celery, white onion, the bok choy {make sure you wash it well} and broccoli.
The beauty of this dish is that it is super simple, there are loads of veggies that aren’t cooked to death so the nutritional value remains plus you can substitute easily. It’s one of those dishes that allows you to make use of veggies that could otherwise go off in the fridge which is a sad story we’ve all seen in our homes. When talking about substituting, you could easily substitute the chicken as well for prawns, make it totally vegetarian, tofu, beef or even pork if you want. Simply put, it’s a sensation any way you stir it!
Below is the video I watched that inspired my mealtime adventure.
